Lòng sơ chế cho sạch. Bóp lòng với giấm cùng muối sau đó rửa thật sạch. Tỏi bóc vỏ, đập dập, ớt thái lát mỏng, lá chanh thái chỉ, chanh vắt lấy nước cốt.
Đun sôi nước, thêm vào nhánh sả đập dập rồi thả lòng vào luộc cho chín. Vớt lòng ra thả vào bát nước lạnh cho lòng đỡ thâm rồi thái miếng vừa ăn.
Cho lòng vào âu, thêm 1 muỗng cà phê đường, 2 muỗng cà phê nước mắm ngon, 1/2 muỗng cà phê bột ngọt rồi trộn đều với lòng. Sau đó cho tỏi đập dập, nước cốt chanh, ớt thái nhỏ và lá chanh vào tiếp tục trộn đều. Để lòng non trộn mắm ngấm 15 phút, rồi cho ra đĩa mời mọi người thưởng thức.
